This easy, classic stuffed celery is a made with 3 simple ingredients of cream cheese, mayo and ranch seasoning for a perfect quick appetizer for parties and holiday dinners or even a snack.
Wash and trim the celery, then cut into 3-inch pieces. Pat the sticks dry with a paper towel to help the filling stick.
6 stalks celery
In a small bowl, mix together the softened cream cheese, mayo, and ranch seasoning until the cheese mixture is smooth. (I use a electric hand mixer but you can just stir as well.)
8 ounces cream cheese, ½ cup mayonnaise, 1 tbsp ranch seasoning mix
Spoon the cream cheese mixture into each celery stick to "stuff the celery".
Garnish with a little dried or fresh dill, paprika or black pepper to taste. Chill for 30 minutes before serving if desired.
Notes
1. Add ¼ cup diced green or black olives.2. Add a ¼ cup of diced cooked and crumbled bacon, ¼ cup of freshly grated cheddar cheese and a couple of tablespoons of thinly sliced chives. 3. Swap the ranch for garlic powder, Italian seasoning or Good Season's dry Italian dressing mix or Everything Bagel seasoning.4. Add finely chopped pecans or walnuts. Place any leftovers in an airtight container in the fridge for up to 4-5 days. I don't recommend freezing the stuffed celery sticks.
