    Ingredients/shopping list

several bowls with ingredients for peanut butter bars - cream peanut butter, powdered sugar, chocolate chips, vanilla extract, salt.

Peanut Butter – I used a creamy peanut butter for this recipe like Skippy or Jif. Make sure it is quality peanut butter as it is going to be the stand out flavor.

Butter – Unsalted butter is what I used. If you use salted butter then omit the salt.

Vanilla and Salt – These two ingredients are gonna enhance the flavor.

Powdered Sugar – If your powdered sugar has a lot of clumps then you can run it through a sifter. This will helps to ensure your peanut butter layer is nice and creamy.

Coconut Oil – The coconut oil is going to help the chocolate get a nice smooth look.

Chocolate – You can use any type of chocolate you want. Milk, semi-sweet chocolate chips, white chocolate, etc.

Sprinkles – You can use festive sprinkles to give this dessert a fun look for Christmas or any other holiday.

    Variations/ Substitutions

    1. Use crunchy peanut butter for the peanut butter base.
    2. Feel free to use another nut butter if you’d like.
    3. Stir in ½ cup graham cracker crumbs or in the peanut butter chocolate bars for a nice crunch.
    4. You can take these to another level and make a graham cracker crumbs crust and then top the peanut butter. Just melt ½ stick of butter and mix in cup of crushed graham crackers. Baked it for 10 minutes at 350° F then let it cool completely before adding the peanut butter layer.
    4. Top with chopped Reese’s peanut butter cups, Reese’s pieces, Holiday M&M’s or chopped pecans or walnuts for a different option.

Step 5: In a separate microwave-safe bowl, add the chocolate chips and coconut oil and microwave for 30 seconds. Then stir and repeat for another 30-seconds then stir. Tips

    • Be very careful not to use too much powdered sugar. Do not over pack the measuring cup. Use the spoon and level with a butter knife method and it be light and fluffy. If you use too much they will be crumbly.
    • Slice with a sharp, bladed knife to cut the bars into your desired size. For nice clean cuts, run warm water over the knife and and wipe the knife clean with a paper towel between each cut.
    • Make sure to ensure the peanut butter mixture is fully mixed up before you add in the powdered sugar. The dry ingredients will begin to form the dough, so make sure it is fully mixed.
    • Use classic peanut butter instead of an all-natural peanut butter as that is more oily.
    • You can double the recipe if you want to make a larger batch and use a 9×13 rectangle dish.

2 teaspoons vanilla extract, ½ teaspoon salt
    • Gradually add the powdered sugar mixing on low speed in between each addition. Scrape down the sides of the bowl as you add. start with 4 cups but you may need a little more if the peanut butter is too wet.

    Notes

More or less confectioners sugar may be needed depending on the peanut butter . You want the bars to hold together but aren’t too wet. Just be sure not to pack the measuring cup. Spoon the sugar into the measuring cup leaving it fluffy and lightly level off with a butter knife.
Slice with a sharp, bladed knife to cut the bars into your desired size. For nice clean cuts, run warm water over the knife and and wipe the knife clean with a paper towel between each cut.
Use a classic peanut butter and not an all- natural peanut butter which tends to be more oily.
Use salted butter if desired but leave out the salt if you do.
Use any kind of chocolate you would like. Semi-sweet, milk chocolate, dark chocolate or even white chocolate.
Coconut oil helps give them a nice shine. Using refined coconut oil doesn’t give a coconut flavor. Omit this if you’d like.
Decorate with any holiday sprinkles you’d like. Or simply top them with flakey sea salt for a great sweet and salty treat
Store them in an airtight container in the refrigerator for up to one week.

Followed the recipe the first time and the bars crumbled they were too dry and the powdered sugar was overwhelming. So next round I put 3.5 cups of powdered sugar in and they were perfect.

Do you mind me asking how you measured your sugar? If you scoop into the bag it’s easy to add too much which will result in them being more dry. I use a scale or the scoop and level method. 🙂

When I went to cut them, the chocolate was so hard on top that is broke into jagged pieces, even when using a warm knife. What did I do wrong?
