Simply baking chicken covered in salsa verde, served over rice or quinoa, makes for one of the easiest dinners ever.
My brother and sister-in-law introduced me to this easy Salsa Verde Chicken recipe a couple of years ago. I always my vacation time with them in the Summer and then again at Christmas. Not only for all the laughs and good times, but for all the fabulous food we create! Their family will coming to my house the day after Christmas for a whole week and I can’t wait to see what goes on our menu.
This is one of those recipes and is fool-proof and full of flavor. I love making it when I need to whip up something quick. While it’s baking, cook the rice or quinoa and it’s ready in less than 30 minutes.
We also have loads of toppings available to add to it as well. Black beans, corn, avocado, cheese, and cilantro. It is SO delicious!!
INGREDIENTS
1 ½ lbs of boneless chicken breasts or chicken tenders
1 teaspoon of garlic powder
1 16 oz jar of Salsa Verde
Optional toppings of choice:
½ cup of Monterey Jack Cheese
¼ cup of fresh cilantro
Black Beans
Corn
Avocado
DIRECTIONS
Preheat oven to 350 F
Place the chicken in a baking dish
Pour about ¾ of the jar of salsa verde over top of the chicken
Bake for 30 minutes or until chicken is no longer pink in the middle. (180 degrees on a meat thermometer)
Remove from oven and shred with a fork or pulse in a food processor or a few seconds.
Serve over rice or quinoa.
Top with remaining salsa verde and with toppings of choice listed above.
