Clean Eating Recipe: Chicken, Avocado, Cucumber, Tomato Salad
I wanted to share this quick, easy clean eating recipe with you that I love……Chicken, Avocado, Cucumber, Tomato Salad. I literally could eat it every.single.day. It is also extremely cheap to make!
For the chicken, I usually bake 2 or 3 chicken breasts with a little garlic powder and pepper drizzled with coconut or olive oil and use it for several days. It is also very yummy to use Roasted Chicken too.
My ultimate favorite additions are a little feta cheese and roasted almonds or pecans.
Simple Ingredients
¼ cup diced chicken
½ avocado, diced
½ cucumber, diced
½ large tomato or whole small tomato, diced
1 teaspoon of Feta cheese crumbles, optional
10 roasted almonds or pecans, optional
Mix together and enjoy! 🙂
