This cranberry almond chicken salad is a delicious twist on a classic favorite. Made with simple ingredients, it’s perfect for lunch, get-togethers with friends and even wedding and baby showers.

I was introduced to this chicken salad recipe from my mother-in-law and I absolutely fell in love with the flavors! I have always been kind of an classic chicken salad lover. The kind that is actually made pretty much like my Southern Potato salad recipe with pickle relish and sometimes hardboiled eggs.
But this is version is simply fabulous for a something different and so delicious. I love the flavors the added garlic and scallions and the crunch the celery and almonds give it.

Ingredients Needed

- Chicken – cooked and shredded. Or use all the meat from a whole Rotisserie chicken
- Mayonnaise – Hellman’s or Duke’s is my favorite mayo to use. Any favorite of your works. You can also use Miracle Whip as well.
- Sour cream – Use light or full fat. Swap it for plain Greek yogurt too if you’d like.
- Celery – sliced thin
- Scallions – sliced thin
- Garlic Powder
- Sliced almonds
- Dried cranberries – or cherries. I try to find the all natural, no sugar added type.
How to Make This Chicken Salad Recipe
Step 1: If you have a whole rotisserie chicken like I use, remove the meat from the chicken and put chop into small pieces. I use my food processor to do this and it is so quick and easy. Literally, put the pieces of chicken in and pulse for 4 or 5 times.
If you have baked or boiled chicken breasts, use about 2-2 ½ cups of it chopped either by hand or in your food processor.
Step 2: Add all the other ingredients and mix well.

Ingredients

- ½ sour cream
- ½ cup of celery sliced thin
- ¼ cup scallions sliced thin
- 1 teaspoon of garlic Powder
- ½ cup of sliced almonds
- ½ cup of all-natural dried cranberries or cherries
Instructions
