Roasted Potatoes in the Air Fryer
One of the first things I wanted to to do when I got my new air fryer was to air fry potatoes. These are by far my new favorite way to make them.
They are ready in half the time as oven baked have them most amazing crispy on the outside and fluffy on the inside texture.

These crispy potatoes make a fantastic side dish for virtually any meal since they are so quick and easy, which makes them great for busy weeknights.
They are my go-to alongside this grilled Italian chicken, these easy baked chicken breasts or baked chicken wings and this slow cooker bbq pulled pork.

- Potatoes – I like using Yukon gold potatoes. Baby potatoes are great to use for quick prep since you can cut them in half.
- Olive Oil – Helps give them the delicious crispiness.
- Dry Thyme & Rosemary – Adds such a great flavor.
- Paprika – Gives them a subtle smokiness.
- Salt and Pepper
Variations/Substitutions
1. Although I love using yellow potatoes, you can use red potatoes, russet potatoes or white potatoes if you’d like.
2. Swap out thyme and rosemary for Italian seasoning.
3. Add a little garlic powder or onion powder to the seasonings for extra flavor.
4. Sprinkle with Parmesan cheese right after cooking.
5. For a little kick, add a pinch of cayenne pepper or red pepper flakes
How to Make this Easy Air Fryer Potatoes Recipe
Step 1: Cut potatoes into equal sized cubes and place them in a bowl.
Step 2: Add the oil and spices and toss the potatoes to coat completely, making sure they are evenly coated.
Step 3: Preheat the air fryer to 400 degrees F and arrange the potato cubes in the air fryer basket in a single layer to they will crisp the best. (if they are overcrowded they will not crisp up as well).
Step 4: Cook the potatoes for 15 minutes, shaking the basket every 5 minutes to ensure they crisp up evenly. If you like them extra crispy, feel free to increase the cook time a little longer. Just be sure to keep an eye on them.
Step 5: I like place the cooked potatoes on a wire cooling rack after cooking to keep them crispy.
Tips:
- Cut them in equal sizes for even cooking.
- Don’t overcrowd the basket. Place the potatoes in a single layer so they get crispy and tender.
How to store and reheat leftovers
Refrigerate: After letting the potatoes cool completely, store them in an airtight container in the refrigerator for up to 4 days.
Freeze: you can also freeze cooled potatoes in a freezer bag for up to 3 months.
Reheat: place the potatoes in the air fryer basket for a few minutes to crisp them up again. (Spray with a little oil or cooking spray if you’d like). They can also be reheated in a skillet on the stovetop or place potatoes on a baking sheet and bake at 375° F for a few minutes until heated through.
FAQ’s
No, you can leave the skin on for extra nutrients. But you can peel them if you prefer. Just wash and pat dry with a paper towel before you cut the potatoes.

- 2 pounds baby potatoes
- 4 tablespoons olive oil
- 2 teaspoons dry thyme
- 2 teaspoons dry rosemary
- 2 teaspoons paprika
- 1 ½ teaspoons salt
- ½ teaspoon ground black pepper
Instructions
- Dice the potatoes into bite-size pieces and place them in a large bowl.2 pounds baby potatoes
- Add the oil and spices and toss to coat completely.4 tablespoons olive oil, 2 teaspoons dry thyme, 2 teaspoons dry rosemary, 2 teaspoons paprika, 1 ½ teaspoons salt, ½ teaspoon ground black pepper
- Preheat the air fryer to 400° F and place the diced potatoes in the basket in a single layer. (cook in batches if your air fryer basket is smaller).
- Cook the potatoes for 15 minutes, shaking the basket every 5 minutes. Add time to get to desired crispiness.
- I like to place the potatoes on a wire cooling rack instead of placing them in a bowl when I take them out of the air fryer so they stay crispy.
