Best Mango Salad
This fresh salad is one of my favorites summer salads! It’s incredibly easy to make and can be whipped up in no time. The simple soy lime dressing adds such wonderful flavor to the sweet mango!
There are rarely leftovers, so feel free to double the recipe if you’d like.
Salad Ingredients to Gather
Below is a list of the ingredients you’ll need to gather to make this recipe. Scroll down to the full recipe card for individual amounts.
For the salad
- Yellow Mangoes – freshly sliced; I love yellow but use any mango you love. Just be sure to choose ripe mangoes that not too soft.
- Red Bell Pepper – Use orange or yellow bell peppers if you’d like.
- Red Onion – Substitute green onion or sweet yellow onion for red onion.
- Fresh Cilantro – fresh and chopped. You can swap this for fresh basil or fresh parsley if you’re not a cilantro fan.
- Fresh Mint – fresh and chopped.
- Roasted peanuts – You can also substitute toasted almond slivers or cashews. Use sunflower seeds or pumpkin seeds for a nut-free option.
For the Dressing:
- Soy sauce – For perfect Asian flavor. I use low sodium soy sauce in mine. Use tamari or coconut aminos for a gluten-free salad dressing.
- Lime juice – Fresh lime juice is best but you can use bottled as well.
- Sesame oil – I love the nutty taste this gives it. You can swap it for olive oil or avocado oil if you’d like.
- Tahini – adds creaminess
Variation Ideas
- Add sliced avocado or sliced english cucumber.
- Sprinkle some red pepper flakes or sliced jalapeños or ¼ teaspoon of grated ginger for a spicy kick.
- Add some honey to the dressing. ½ teaspoon should be plenty.
- Add a teaspoon of sweet red chili sauce to the dressing.
- Add grilled chicken for a more complete meal.
How to Make Mango Salad
Step 1: In a medium bowl, add thinly sliced mango, bell pepper, onion, and peanuts.
Step 2: In a small bowl, whisk together the dressing ingredients.
Step 3: Pour the dressing over the salad and toss to combine until well coated. Top with fresh herbs.
Tips
- Use mangoes that are not overly ripe to prevent them from becoming too mushy.
- Serve immediately for the best taste and texture.
- Store leftovers in an airtight container in the refrigerator for up to 3-4 days.

For the Dressing

- 2 tablespoons lime juice
- 1 tablespoon sesame oil
- 1 teaspoon tahini
Instructions
