    Slow Cooker Lemon Herb Roasted Chicken

    This Slow Cooker Lemon Herb Roasted Chicken is so unbelievably tender. So easy to prep and have ready for you when you get home from work.

    I have been wanting to try a whole chicken in my slow cooker for so long.  Today I did it!  I can not tell you how happy I am!   And the smell….oh the smell that fills the air is delish!

    The chicken is SO tender that I could not even take him out of the cooker without some of his wings falling off.  Can we say YUM!? 🙂

    Ingredients:

    1 5-6 raw whole chicken, about 5-6 pounds.

    1 tablespoon Garlic Powder

    ½ teaspoon of Onion Powder

    1 tablespoon Rosemary, fresh or dried

    1 teaspoon of Thyme

    ½ teaspoon of pepper

    1 lemon, sliced

    1 onion, sliced (optional)

    Directions:

    Remove the plastic baggie of neck, etc from inside the chicken.

    Mix your spices together in a small bowl and  rub the whole outside of the chicken with spice mixture.

    Stuff the cavity of the chicken with lemon slices and onion slices.

    Place the chicken in the slow cooker and cover.

    Cook on low for 8-10  hours or 4-6 hours on high until meat thermometer reads 180 F.  I cooked mine for 6 hours on high and it was perfect!!

      this looks delish…I think I’m going to try this but using chicken breasts instead of the whole chicken and serve it with rice, beans, and veggies.

      Could this be done removing the skin? I don’t like the texture of chicken skin cooked in a slow cooker. I was wondering if I could just remove the skin, generously rub with olive oil then precede with the seasoning.

        I’m sure you could. I am getting ready to make this again tomorrow and I am going to try it. I remove the skin on all other chicken recipes I make so I can’t imagine it would still not be delicious. 🙂
