This Fruit Salad with Honey Lime Dressing is a deliciously refreshing addition to any meal. What better way to get more fruit into everyone’s day.
With the warmer weather here and barbeques happening often, I start making this fruit salad with honey lime dressing a couple of times a week. Not only is it so fresh and tasty, it’s the best way to get my children to eat much more fruit.
It’s the most wonderful phenomena! Put fresh, peeled, sliced, and diced fruit in a bowl and they will eat. If I just say, “eat a piece of fruit” when they are staring aimlessly into the cabinet for a snack that’s not there, does the fruit eating happen? Oh no. That is just too hard for some reason.
This fruit salad with honey lime dressing goes on the table at almost every meal during the summer. Everyone spoons extras onto their plate! It’s fabulous to watch! I really should continue it throughout the year. It’s just so much yummier with the fresher fruits this time of year.
You can, of course, add any fruit you would like. I do like to change it up every time I make it. Add a couple of sliced bananas, grapes, blackberries, kiwi, raspberries, apple, melon…anything!
1 lb of watermelon, diced
1 pineapple, sliced and diced
12 oz of blueberries
1 lb of strawberries, sliced
3 clementines or mandarin oranges, peeled
Honey Lime Dressing
1/4 cup of organic honey
1 Tablespoon of lime juice
Mix all fruit in a bowl
In a separate bowl, whisk together honey and lime juice.
Pour honey lime dressing over fruit and toss until mixed thoroughly.
