Carrot cake bites are both delicious and nutritious. They are a great source of fiber, healthy fats, and are perfect for on-the-go snacks.
These bites are gluten-free (when using GF oats) and dairy-free, making them a great option for people with dietary restrictions.
Ingredients for Carrot Cake Balls
(makes about 24 bites)
Rolled oats – use old fashioned oats or quick cooking oats
Shredded carrots – I like to shred by own but you can buy pre-shredded as welll.
Raisins – You can substitute craisins as well.
Chopped almonds – I use a food processor or hand chopper to get them crushed finely.
Cinnamon, Cloves, Nutmeg
Almond butter – for binding the ingredients.
Maple syrup – Use the real stuff for the best flavors.
How to Make these Carrot Cake Bites
In a mixing bowl, mix together oats, shredded carrots, almonds, raisins, and cinnamon.
Add almond butter and maple syrup and mix together thoroughly.
Place mixture in the refrigerator for one hour.
Shape into one-inch bites.
Variations/ Substitutions
- Add pitted dates – add ½ – 1 cup of dates. If using them, place all the ingredients in a food processor and pulse until blended completely. Then refrigerate and roll into balls.
- Swap of another kind of nut – Use shopped pecans instead of almonds.
- Swap the nut butter – Use cashew butter, sunflower butter, or even peanut butter if you don’t mind a more nutty flavor.
- Swap the sweetener – Use honey or agave syrup or even a sugar free alternative.
How to store energy bites?
Store these energy balls in the refrigerator in an airtight container in a singlel layer for for up to 4-5 days.
Can you freeze energy bites?
Yes! They are great to make ahead and freeze. Place the rolled balls in a freezer safe container and freeze for up to 2-3 months. I like to flash freeze them on a baking sheet for about an hour then place, then place them between parchment paper or wax paper to keep them from sticking together in the container.

Ok these are delicious and no doubt healthy, but a tip from me: if you buy shredded carrots, cut in half , if doing the shredding, go smaller. The carrots don’t seem to stick in with everything else. I used peanut butter and pecans .Those were my substitutes.

This are the most delicious energy bites, I made one batch and my husband just loved them. The next day I made a double batch. I used Adams Chunky Peanut butter and chopped unsalted peanuts instead of the Almond butter and chopped almonds. And only used cinnamon not the other spices.

I subbed peanut butter for almond butter, used dried apricots over raisins, 1/2 tsp nutmeg and 1/2 tsp cinnamon (didn’t have cloves) with a little kosher salt. It was absolutely delicious and a similar calorie count as the original recipe
