    These Lemon Herb Chicken Lettuce Wraps with Citrus Slaw are a wonderful, light and easy lunch or dinner idea.  The perfect amount of zest and crunch and is ready in less than 20 minutes.

    Do you ever just want something so easy, healthy and ridiculously delicious to eat?  I’ve got it for you with these Lemon Herb Chicken Lettuce Wraps with Citrus Slaw!!  It doesn’t get much easier than this.

    Last year I was introduced to  the Cooked Perfect® brand when making these Meatballs and Roasted Vegetables.

    I have recently discovered the fabulous Cooked Perfect Fire Grilled Chicken line as well and that’s where the idea for these Chicken Lettuce Wraps came about.  It’s nice to have juicy, flavorful, easy chicken that Cooked Perfect Fire Grilled Chicken quickly brings to the table.

    If you prefer, you can  of course also grill these Italian Chicken Tenders or pan saute chicken tenders sprinkled with garlic powder, salt and pepper as well.

    Bibb or Butter Lettuce leaves, rinsed and dried (These are hearty little leaves but you can also use the longer Romaine leaves if you’d like.)

    Lemon Herb Chicken Lettuce Wraps with Citrus Slaw

    HOW TO MAKE THE CITRUS SLAW

    This is the perfect citrus slaw that you can use for so many meals! It’s fresh, healthy, crunchy, and the absolute perfect topping for these lettuce wraps.

    Citrus Slaw Ingredients

    1 cup slaw mix

    ¼ cup cilantro finely diced

    ½ cup shredded carrots

    juice of 1 lemon

    1 teaspoon salt

    pepper to taste

    1 tablespoon mayo, optional

    A plate of food with a green salad, with Chicken and Lettuce

    Instructions

    Preheat oven to 400 degrees F.

    Cook the Cooked Perfect Fire Grilled Lemon Herb Tenders for 15 -16 minutes per package instructions. Or grill or pan saute chicken tenders seasoning with garlic powder, salt and pepper for 4 minutes on each side.

    Wash the leaves of butter lettuce and pat dry

    In a medium bowl, mix the slaw ingredients together.

    Place a chicken tender on each piece of lettuce.

    Top with citrus slaw.

    ENJOY!!
