These homemade Maple Brown Sugar Granola Bars are loaded with yumminess. Added cinnamon, vanilla and nutmeg add extra special flavor to this healthy treat.
Maple Brown Sugar Granola Bars
My family loves the No Bake Almond Butter Granola Bars that I make often for a healthy snack. But I was in the mood to try something a little different this morning.
These Maple Brown Sugar Granola Bars are sooooooo good! There is something about that combination of flavors. Plus adding a little cinnamon and nutmeg made them extra special.
I also toasted the oats this time for about 15 minutes on 35o degrees F. This adds a little extra nutty flavor.
Grab one of these for a healthy afternoon snack for you and your kids after-school. A cold glass of milk is the perfect compliment too! 🙂
Ingredients for Granola Bars
3 cups old fashioned oats (Gluten free if desired)
2 Tablespoons melted coconut oil (grapeseed or canola would work too)
2 Tablespoons maple syrup
2 Tablespoons brown sugar
¼ cup honey
1 teaspoon vanilla
½ teaspoon cinnamon
¼ teaspoon nutmeg
1 – 1½ cups raisins and/or any nuts
4 ounces of dark chocolate, optional
How to Make Homemade Granola Bars
Preheat the oven to 350°F
Place oats in a 9 x 13 pan.
Toast them for 15 minutes until light brown, stirring once.
Remove from oven and cool oats for about 10 minutes
Line a 9 X 9 glass baking dish with parchment paper.
In a small saucepan, heat the oil over medium high heat.
Add the brown sugar, maple syrup, honey, vanilla, cinnamon, and nutmeg.
Simmer over medium heat, stirring until the brown sugar has dissolved.
Place the toasted oats in a large bowl and pour the heated liquid ingredient over the oats.
Stir to coat evenly.
Fold in your fruit and nuts (and other add-ins)
Spoon the mixture into the prepared pan and press until it is flatten. You can use the back of a spoon or another piece of parchment paper to flatten it out.
Cover and place them in the refrigerator for at least an hour.
Optional – You can bake them for 20 minutes at 325 degrees F if you would like a more crunchy granola bar 🙂
Turn them out of the pan onto a cutting board.
Slice down the middle and then cut each half into 6 bars.
If desired, melt chocolate in a small saucepan over low heat (or in the microwave at 1 minute intervals) and drizzle the chocolate over the sliced bars with a spoon.

I adapted this recipe to be halved, and I used all maple syrup instead of adding honey (1:1 replacement), and they ended up being crumbly and tasting dry/floury. It feels like the oats weren’t toasted enough, even though I did extra time so they would get to a light brown color, and I was hoping there would be a bit of crunch to it, as opposed to this chewy, dusty flavor.
I added pecans, which worked well enough, but it falls apart easily. I wonder if my oven didn’t get to temp, or if the oats were too old and beaten up (best by a year ago). It’s possible I didn’t compress them enough, which led to the crumbliness.
I think I’ll try a different recipe in the future, and maybe with fresher ingredients. It kind of just tastes like flavored raw oats as opposed to granola, unfortunately.
