    These Ritz cracker cookies are the perfect treat to sweeten up parties or special occasions. Using just a handful of basic ingredients, you can whip up a batch of this easy cookie recipe in no time.

    ​Easy Rolo Ritz Crackers

    If you’re a fan of a sweet and salty treat, you’ll absolutely love these Ritz cracker sandwiches. They’re a unique twist on turtle cookies and are sure to be a hit at any parties during the holiday season, cookie exchanges or as a sweet treat just for yourself.

    Ingredients Needed:

    Three bowls of chocolate chips, pecans and chocolate chips and several ritz crackers on a marble table.

    Below is a list of the ingredients you’ll need to gather to make this easy recipe. Scroll  down for the full recipe card with amounts.

    • Ritz crackers: This buttery cracker makes a wonderful base for the cookies. While Ritz crackers work best for this recipe, you can experiment with other buttery crackers for different flavors.
    • Rolo candies: the star of the show! Rolos add a gooey caramel center, making them irresistibly chewy and sweet. You can use other caramel-filled candies if you can’t find Rolos.
    • Pecan halves: give a delightful crunch and nutty flavor, complementing the sweet caramel and chocolate. If you’re not a fan of pecans, try using almonds or walnuts instead.
    • Semi-sweet Chocolate chips: These are used to create a luscious chocolate drizzle on top of your cookies, adding a touch of decadence. Experiment with different types of chocolate chips like dark chocolate, chocolate candy melts, chocolate almond bark or white chocolate chips for the drizzle.

    Variations To Try:

    1. For a festive touch, consider using holiday-colored candy melting wafers for the drizzle.

    2. To add an extra layer of flavor, sprinkle a touch of flaky sea salt or festive sprinkles (red and green sprinkles are perfect for your holiday cookie tray) on top of the melted chocolate drizzle.

    3. Instead of the rolo in the center, just bake the top cracker with a Rolo. Spread a layer of peanut butter (or almond butter) or marshmallow fluff on the bottom cracker and sandwich them together.  

    How to Make this Ritz Sandwich Cookie Recipe:

    Step 1: Preheat the  oven to 300°F and line a baking sheet with parchment paper.

    Step 2: Arrange the Ritz crackers in a single layer on the prepared baking sheet, half facing up and half facing down.

    Step 3: Top each cracker with a Rolo .

    Step 4: Bake for about 5 minutes or until the candies have softened.

    Step 5: Gently press a pecan half into the melted Rolo on the side facing up.

    Step 6: Then carefully sandwich the crackers together, mashing the melted Rolo down without breaking the cracker.

    Step 7: In a microwave-safe bowl, heat the chocolate chips in 30-second intervals at 50% power level or the defrost mode, stirring in between, until melted and smooth.

    Step 8: Place the melted chocolate chips to a piping bag and drizzle it over the top of each cookie. (you can also drizzle if over with a spoon from the bowl if you’d like.

    Step 9: Let the cookies cool completely on the cookie sheet for about 15 minutes.

    Tips:

    • Add a teaspoon of coconut oil to the chocolate chips when melting to thin them out a little more for drizzling.
    • You can also melt the chocolate in a double boiler or in a tightly twisted piping bag for precision.
    • Feel free to make a double batch for larger gatherings.

    How to store these Ritz cookies?

    Store these cookies in an airtight container at room temperature for 7-10 days. Place a piece of wax paper or parchment paper between layers to prevent sticking.

    Can you freeze Ritz cracker cookies?

    Yes, you can freeze them in an airtight container freezer safe container or plastic freezer bag for up to 2-3 months.

    Ingredients

    • 32 Ritz crackers
    • 32 Rolo candies
    • 16 pecan halves
    • ¼ cup chocolate chips

    Instructions

    • Preheat oven to 300° F and line a baking sheet with parchment paper.
    • Place the Ritz crackers in a single layer on the baking sheet, with half of them facing up and half facing down.

    • Place an Rolo candy on top of each cracker.

    • Place the cookie sheet in the oven and bake for approximately 5 minutes or until the candy has softened.
    • Lightly press a pecan half into the melted Rolo of the crackers that is facing up.

    • Then, lightly place those crackers on top of the other crackers to sandwich them together and mash the melted Rolo down, being careful not to break the cracker as you press them down to
    • Allow the cracker cookies to set at room temperature until completely cooled.
    • In a microwave safe bowl, add the chocolate chips and heat them for 30 seconds. Then stir and repeat for another 30 seconds. Be careful not to overheat the chocolate or it will become too thick to drizzle.
      ¼ cup chocolate chips
    • Place the melted chocolate in a piping bag and drizzle it over the top of each cookie.
    • Let them cool completely and set for about 15 minutes.

    Notes

    Store in an airtight container for up to 7-10 days.
    You can also use chocolate melting wafers for the drizzle.
    Melt then chocolate in a double boiler or in a piping bag twisted tight.
    Use holiday colored candy melting wafers to drizzle over the crackers.
