    This haystacks recipe is a classic, no-bake treat that’s easy to make with just three simple ingredients. They are a favorite sweet, salty and crunchy candy for holiday parties, cookie exchanges or gift boxes.

    Clusters of haystacks are arranged on a sheet of parchment paper.

    The Best Old Fashioned Haystacks Candy

    Making these classic haystacks is always at the top of my list for the holidays.   We make batches of chocolate haystacks and these butterscotch haystack cookies every year.  You can also make them with white chocolate chips. 

    They are a fun holiday cookie tradition of my kids. They have always loved that they could easily make them by themselves as they got a little older and, of course, they always like to decorate them with holiday sprinkles.

    But they are definitely not just for Christmas!  They are a hit at any party or potluck when you need something super fast! I mean under 10 minutes fast!

     Ingredients Needed for Haystacks

    The complete list of ingredients with amounts are listed in the full recipe card below.

    • Butterscotch Chips – I use Nestle brand but use any brand you’d like.
    • Peanut Butter – plain creamy peanut butter works best for this recipe not all natural types. You can swap this for sun butter for an nut free option or leave it out completely. You can use crunch peanut butter too.
    • Chow Mein Noodles – They are found in the Asian aisle in most grocery stores. I don’t chop them. For a gluten free version, swap these for potato sticks.

    Variations to Make

    1. Add ½ cup of dry roasted peanuts, sliced almonds, coconut flakes or mini marshmallows.

    How To Make This Butterscotch Haystack Recipe

    Step 1: Line a baking sheet / cookie sheet with parchment paper.

    Step 2: In a medium bowl (that's microwave safe, add the butterscotch chips and peanut butter.

    Step 3: Microwave at 60% power level for one minute.  Remove from the microwave and stir. Then repeat again for 30 seconds. Remove and stir again until chips are melted. The bowl is usually warm enough to keep melting them. (you can also use a double boiler to melt the chips)

    Step 4: Add the chow mein noodles into the melted mixture and stir until coated thoroughly.

    A baking sheet lined with parchment paper holds twelve evenly spaced haystacks.

    Step 5: Using a spoon, scoop the mixture onto the parchment paper into about 2 inch stacks.

    Let them cool until hardened before enjoying. Place in the refrigerator for a few minutes if you'd like.

    Storing Leftovers

    Store these no-bake treats at room temperature in an airtight container for up to a week. They don’t need to be refrigerated but you can if you’d like them to last a little longer.

    Ingredients

    • 11 ounces butterscotch chips
    • ¾ cup peanut butter
    • 10 ounces chow mein noodles

    Instructions

    • Microwave on 60% power for one minute. Remove and stir. Repeat again for 30 seconds then move and stir until chips are melted. The bowl is usually warm enough to keep melting them.
    • Add the chow mein noodles into the melted mixture and stir until coated thoroughly.
      10 ounces chow mein noodles
    • Using a spoon, scoop the mixture onto the parchment paper into about 2 inch stacks.
    • Let them cool until hardened before enjoying. Place in the refrigerator for a 15-20 minutes if you'd like.

    Notes

    Add seasonal sprinkles
    Add ½ cup of mini marshmallows or dry roasted peanuts when you add the chow mein noodles.
    Swap the peanut butter for sun butter for a peanut free option
    Store in an airtight container for up to 5-7 days.
