This Simple Gluten Free Sweet Cornbread is a wonderful adaptation of Del Monte’s recipe. No one would ever guess it’s gluten free.
It’s hard to believe but before we know it Easter will be here! YAY! Easter, Spring, warmer weather! All big yay’s over here!
Our Easter is actually very low key. Our family is so spread out that it’s just the four of us for a simple Easter dinner. It usually involves the traditional ham, roasted asparagus, garlic mashed cauliflower and avocado deviled eggs. Since I have gone gluten free, I decided to add my favorite yummy gluten free cornbread to our meal this year. (and no rolls for this gal)
You know how I like easy recipes, right? Well Del Monte has several wonderful #10MinuteWow recipes and I love, love the Golden Sweet Cornbread recipe. I simply use a gluten free corn bread or muffin mix and I have one of the quickest and yummiest recipes to enjoy!
If you have never made it this way, adding cream style corn and whole kernel corn makes such a deliciously moist and sweet cornbread!
INGREDIENTS
2 pkg. (8.5oz.each) of gluten free corn bread mix
2 eggs
1 can (14.75oz.) Del Monte® No Salt Added Cream Style Corn
1 can (15.25oz.) Del Monte® No Salt Added Whole Kernel Corn, drained well.
DIRECTIONS
Preheat oven to 400°F.
Grease a glass or metal 9-inch square baking dish.
In a large mixing bowl, mix all of the ingredients together until blended well.
Pour batter evenly into prepared pan.
Bake for 40 to 45 minutes or until golden brown and when a toothpick inserted into the center comes out clean.
Cool 10 minutes.
Then cut and ENJOY!
