This Cilantro Lime Rice turns boring into fabulous. Loads with fresh flavor for a wonderful side dish to any Mexican meal.

Cilantro Lime Brown Rice

CILANTRO LIME BROWN RICE

Ever since I fist tried Chipotle’s infamous cilantro lime rice I knew I had to make it at home too.  It’s super to use in so many ways.  Plain as a side or loaded up with all kinds of toppings like in this rice bowl.

It is such an easy way to kick some excitement into just plain ole rice.  If you want an sen more robust flavor, cook the rice in chicken or vegetable broth instead of water.

It’s fantastic as a side to this Barbacoa recipe too.  Another chipotle copycat recipe win!

INGREDIENTS

1 cup Basmati or Jasmine Brown Rice

2 cup Water

1 tbsp coconut or olive oil

1/4 cup finely chopped Cilantro

2 TBSP Lime Juice

DIRECTIONS:

Cook rice as directed on your package.  (Water needed may vary)

Mix in oil, lime juice and cilantro and fluff with a fork

Serve and ENJOY!!

    I’m glad that the recipe uses brown rice. I like it so much better than plain white rice. It just seems to be more hearty and tasty.
