Healthy Molasses Raisin Oat Muffins
I have a confession. I am a molasses lover! There I said it. I could literally eat it by the spoonful. I know some of you may have just cringed a little at that thought.
My love goes way back to Sunday’s at my Grandmother’s house. Those Sunday dinners always included fresh homemade biscuits. My dessert of choice was always a biscuit covered in butter and molasses. Let me tell you. It is fantastic!
But, unfortunately, those molasses and butter smothered biscuits are not this girl’s best friend when it comes time to stepping on a scale. Now I find healthier ways to satisfy my little molasses cravings.
These healthy Molasses Raisin Oat Muffins are delish and make a perfect breakfast or snack to have alongside a cup of greek yogurt.
INGREDIENTS
2 ½ cups oat flour
½ cup organic coconut sugar
¼ teaspoon salt
1 teaspoon cinnamon
¼ teaspoon cloves
¼ teaspoon of nutmeg
1 tablespoon baking powder
½ cup raisins
1 tablespoon molasses
1 tsp. vanilla
4 oz of unsweetened apple sauce or 1 apple diced
3 eggs
1¼ cup milk
1 tablespoon coconut oil

[b]For the Topping:[/b]
3 tablespoon oats
2 tablespoon organic coconut sugar or brown sugar
How to Make Healthy Molasses Raisin Oat Muffins
Preheat oven to 350 degrees F
Combine the dry ingredients in a large bowl.
In a food processor combine the raisins, molasses, vanilla and applesauce (or diced apple) and pulse a few times to blend
In a smaller bowl combine the eggs, milk and oil.
Add the wet ingredients to the dry ingredients and mix gently.
Stir in the molasses mixture.
Grease the muffin tin with coconut oil
For the Topping:
In a small bowl mix together the above ingredients.
Sprinkle topping mixture on each muffin.
Bake 15 – 18 minutes or until a toothpick comes out clean.
