    No Churn Homemade Mint Chocolate Chip Ice Cream

    This no churn homemade mint chocolate chip ice cream recipe is so easy! Use simple ingredients to make this a smooth and creamy ice cream treat.

    Little Miss Pinterest lover (aka My 11 year old daughter) wanted to make a new St. Patrick’s Day treat for you this week. And the girl is all about ice cream lately.

    I have such fond memories of making homemade ice cream at my grandparents house in rural NC. I remember watching in anticipation as my grandmother added the ice from her freezer trays and rock salt to that wooden bucket.

    I remember everyone taking turns cranking the handle on that old boy. (which felt like an eternity but was probably like an hour). Now before you start thinking I’m in my 80’s, my grandparents were not the type to get the new fancy electric version.  Noooo0o, it was all about the cranking experience. Looking back now, it was fabulous!

    This recipe is so simple I’m embarrassed to even call it a “recipe”. The great thing is that you can use the base 2 ingredients, 2 cups of heavy cream and 1 can of condensed milk, and make any other flavor you’d like.

    Substitute vanilla extract for the mint extract for a wonderful creamy vanilla ice cream. Add in fresh fruit like strawberries or peaches too. Peach, ah fresh Southern peach, was my favorite that my grandmother made.

    But for today, it’s this wonderfully creamy Mint Chocolate Chip yumminess. (no fancy electric cream maker needed).

    INGREDIENTS

    2 cups of heavy cream

    1 1 oz can of sweetened condensed milk

    2 teaspoon of mint extract

    3-4 drops green food coloring (optional)

    1 cup of chocolate chips

    DIRECTIONS

    Using a mixer set on high, blend together the heavy cream, condensed milk, mint extract and green food coloring for about 5 -7 minutes until thick.  (it will not peak like whipping cream but will just become thicker.

    Pour the mixture into a freezer safe container.  I used a loaf pan.

    Cover and freeze for 2 hours.

    Remove from freezer and add the chocolate chips.

    Stir with a knife to mix in the chocolate chips.

    Cover and freeze for an additional 6 hours.

    ENJOY!!
