Ingredients on a kitchen counter, including onions, black peppercorns, butter, dried herbs, and balsamic vinegar in a white dish.

Below is a list of the ingredients you’ll need to gather to make this easy recipe.  Scroll down to the full recipe card for individual amounts.

    • Yellow onions: Peel the onions before baking them.
    • Balsamic vinegar:  Use regular or white balsamic vinegar. Other flavored balsamic vinegars are great to use as well.
    • Italian seasoning: A classic blend with basil and oregano.
    • Salt and pepper
    • Butter: I used unsalted but you can use salted as well.

    Variations/Substitutions:

    1. Feel free to use a different type of onion. White onions, sweet onions or even red onions work as well.
    2. Swap the Italian seasoning for just basil and oregano if you prefer.
    3. Add a sprinkle of garlic powder to each onion. Rosemary and thyme are also great options.
    4. For a vegan version, use olive oil or a plant-based butter substitute instead of butter.
    5. Sprinkle with parmesan cheese the last 5-10 minutes of baking.

Step 5: Bake in the preheated oven on the middle rack for 40-45 minutes, until the onions are soft. If they are getting too brown on top, loosely cover the dish with foil.

    Serve the onions warm.

    Tips:

    • Choose similar sized onions for even cooking.
    • Let the onions sit for a few minutes after baking to absorb the juices.
    • Cooking time may vary depending on the size of your onions.

Store any leftovers in an airtight container in the refrigerator for up to 5 days.

Reheat in the microwave on a microwave safe plate for 30-60 seconds or in the oven at 325° F until warmed through.

Can I make these onions ahead of time?

Yes, you can bake and refrigerate them a day in advance. Reheat in the oven on low just until heated through.

If you chill onions in the freezer for about 15 minutes before peeling and cutting them it tends to reduce eyes tearing.
