    Easy Cauliflower Rice

    This Cauliflower Rice recipe is a healthy, low carb addition to any meal. You won’t believe how wonderful this simple this recipe is.

    I am always looking for new exciting ways to cook veggies.  One that I don’t eat enough is cauliflower.  Pretty much the only time I eat cauliflower is if on a Veggie Tray with a dip at someone’s house.

    Cauliflower is such a healthy vegetable!   I cook a lot of my other green vegetables sauteed with onion and garlic in a little coconut oil, so I figured I would try it with cooked cauliflower and turn it into Cauliflower Rice.

    It turned out soo good!!!   I served along with this Slow Cooker Lemon Herb Roasted Chicken and Easy Roasted Asparagus.

    Try this Mexican Cauliflower Rice too!

    How to Make Cauliflower Rice

    Place the chopped cauliflower in the food processor and pulse for about a minute. I did this in 2 batches.

    Heat the coconut oil in a large saute pan.

    Add the onion and garlic and saute for about 10 minutes.

    Add the cauliflower and saute for 15 – 20 minutes, stirring every 5 minutes.

    Remove and serve immediately!

    ENJOY!!

    This easy Cauliflower Rice Pilaf recipe is a great healthy addition to any meal. You won’t believe how wonderful this simple recipe is.

    Ingredients

    • 1 head Cauliflower
    • 1 onion, chopped
    • 4 cloves garlic cloves, minced
    • 2 tablespoon coconut oil
