Sugar Cookie Fruit Pizza Recipe
Can I interest you in a slice of dessert pizza? Oh, you’ll take two? I don’t blame you!
This beautiful and colorful fruit pizza is one of the easiest and most requested desserts I make! It’s the quintessential summer dessert because it’s loaded with plenty of seasonal fresh fruit overtop a melt-in-your-mouth buttery cookie crust.
I use a store-bought sugar cookie dough for a short cut but you can certainly make your own if you have some extra time. Once baked, it’s then smeared with a thick cream cheese frosting and topped with fresh berries.
For this recipe, I’m using strawberries and blueberries for a red and blue pattern which happens to always make an appearance on the 4th of July and Memorial Day parties.
When I want a more vibrant rainbow effect, I’ll use a variety of colorful fruit. Sometimes I’ll even add some chocolate chips on top of the frosting.
Ingredients/shopping list
- Sugar Cookie Dough: I love using store-bought refrigerated sugar cookie dough (by favorite is Pillsbury sugar cookie dough) does make this super quick and easy. It also makes for a great last-minute dessert.
- Cream Cheese, softened: Use the block of cream cheese, not a tub of spreadable cream cheese because it’ll thin out your frosting. Bring the cream cheese to room temperature for about 30 minutes before mixing.
- Sugar: To sweeten up the tangy cream cheese frosting. You can use powdered sugar, if preferred.
- Vanilla Extract: Adding vanilla will turn the frosting into a vanilla cream cheese frosting which is the perfect flavor pairing with the sugar cookie as well as the berries.
- Fresh Fruit: Sliced strawberries and fresh blueberries. Be sure to wash and hull the strawberries and wash and pick over the blueberries. You also want to make sure they are completely dry before adding them to the top of the fruit pizza
Variations/ Substitutions
1. Use a different type of fruit to whatever you have on hand, whatever the occasion it is, or whatever season it is. Sliced kiwi, grape halves, mango, peaches, cherries, blackberries, raspberries, etc. You can even add sliced bananas if you soak them in lemon juice first so they don’t turn brown.
2. You can spread Cool Whip on top of the cookie instead of cream cheese frosting if you prefer.
3. Swap regular cream cheese for strawberry cream cheese for extra flavor.
3. You can even choose to use a chocolate frosting instead!
4. Drizzle the top with some sweet honey for a glossy finish!
5. Turn them into mini fruit pizza cookies!
6. Just swap the all-purpose flour for gluten free flour like Bob’s Red Mill One-to-One flour.
How to Make this Dessert Pizza
This giant sugar cookie with frosting and fruit will come together in just 25 minutes! It couldn’t be easier to make but even easier to slice and serve!
Step 1: Grab refrigerated cookie dough and a 12-inch round pan (a pizza pan works great for this) and break off pieces of the dough into the pan.
Step 2: Use your fingers to press the dough into the bottom of the pan so the pieces of dough join together into one big crust. It doesn’t need to go all the way to the edges as it will spread.
Step 3: Preheat oven to 350 ° F and bake the crust for 12-15 minutes until golden brown. Let the crust cool completely before adding the cream cheese spread.
Step 4: Beat the cream cheese until smooth and then add the vanilla and sugar to combine.
Step 5: Spread it overtop the cooled sugar cookie crust, leaving some room around the edges for the crust. Now, add your fresh fruit on top in whatever circular pattern you desire!
Tips
- If you don’t have a round pizza pan, a rectangular baking sheet will work too.
- Line the tray with parchment paper for easy clean up.
- Slice the fruit pizza with a pizza cutter! Cut them into triangles just as you would a regular pizza.
- Avoid using watery fruit like watermelon if you can. The extra water will run and cause the frosting to be runny.
Small Batch Sugar Cookie Dough for the Crust
If you have extra time and would like to make homemade cookie dough to make the crust, here is an easy sugar cookie recipe to use.
Cream ½ cup of softened butter with ¾ cup of white sugar in a large bowl with an electric mixer until fluffy. Add a large egg and ½ teaspoon of vanilla extract until combined. To the same mixture, add 1 ½ cups of all-purpose flour in batches, ¼ teaspoon of baking powder, and ½ teaspoon of salt.
Chill the dough for in the refrigerator for at least an hour and then bake it for 10-12 minutes until golden.
FAQ’s
You can prepare the crust and the frosting the day before. Wait to add the fruit until you’re just about to serve it.
You can! It will keep in an airtight container in the refrigerator for up to 2-3 days, however I will say, it’s not the same after the first day. The longer the fruit sits on top, the soggier the cookie gets. Still tasty though!
Leave it to bake in the oven for an extra few minutes. Watch that it doesn’t burn! I like mine a little underdone so the crust is slightly chewy, but it’s great either way.
