    Roasted Bok Choy

    This oven roasted bok choy is a simple and delicious way to enjoy this nutritious vegetable. With just a few ingredients and minimal prep time, you can create a tasty side dish that is perfect for any occasion.

    I have a love a roasting vegetables. From roasted broccoli, to roasted brussel sprouts to even roasted turnips, I love the flavor that roasting gives them.

    Bok choy is type of cabbage that has long, green leaves and thick white stalks that is popular in many Asian dishes. 

    While it is often used in stir-fries or soups, bok choy is also wonderful roasted. Oven roasting bok choy brings out its natural sweetness and creates a slightly crispy, caramelized texture that is irresistible. 

    It pairs well with cooked white rice, noodles, cauliflower rice with a favorite meat or fish, and can be served hot or cold. With its sweet, nutty flavor and tender texture, roasted bok choy is a must-try for anyone who loves healthy and flavorful vegetable dishes.

    Ingredients needed

    Fresh bok choy – you can use regular bok choy or baby bok choy which as a slighly sweeter flavor.

    Garlic – mincing fresh garlic gives the best flavor buy you can also use jarred minced garlic.

    Soy Sauce – use regular soy sauce or low-sodium soy sauce or coconut aminos or tamari for a gluten free option.

    Sesame Oil – for wonderful asian flavors. You can also use olive oil if that’s all you have

    Salt and pepper to taste.

    Variations

    • Add a little spice like red pepper flakes.
    • Add grated fresh ginger or ginger paste.
    • Add a ½ teaspoon rice vinegar or lemon juice to the mixture for added flavor.
    • Add other vegetables to the baking sheet, such as sliced bell peppers, mushrooms, or carrots.
    • Mix in a little honey or maple syrup to the mixture

    How to Roast Bok Choy

    Preheat oven to 400° F and grease a baking sheet with cooking spray or line with parchment paper.

    Rinse the bok choy, trim off the stems at the bottom, pat dry with a paper towel then slice the stalks in half or in quarters.

    In a small bowl, add the soy sauce, sesame oil and garlic and blend together.

    Place bok choy pieces on the baking sheet in a single layer and brush the oil mixture onto each piece.

    Bake for 10-15 minutes depending on the size boy choy you have.

    Transfer to a plate and drizzle with additional soy sauce, salt and pepper and add toasted sesame seeds if desired

    Tips

    Use a salad spinner for rinsing a drying the bok choy.
