These Healthy Chocolate Truffles are completely decedent! Made with no refined sugar, butter, or oils. Just simple, delicious, melt-in-your-mouth goodness.
I made this little healthy dessert to have for the weekend and, um, they latest just one day! Just toss the ingredients in a food processor and pulse for a few minutes until it’s a smooth dough. Then roll into little truffle balls and then roll in cocoa powder for the finishing touch.
I hope you all had a wonderful long Labor Day weekend. We spent our official last weekend of Summer camping again. We got so lucky with absolutely gorgeous weather. Low 70’s during the day and crisp low 50’s at night. Perfect for hiking and exploring around the White Mountains and campfires at night.
I have made many healthy recipes using dates, these Homemade Lara Bars or these Superfood Energy Bars or this Clean Eating Pecan Pie that is just perfection.
But these little truffles knocked all of our socks off and may just quickly move to the top of the favorite list.
Ingredients for Healthy Chocolate Truffles
makes a dozen balls
15 Medjool dates, pitted (222 grams)
1 ½ tablespoon smooth all natural peanut butter or almond butter (24 grams)
1 ½ tablespoon unsweetened cocoa powder plus 2 tablespoons for rolling
1 tablespoon almond milk (coconut milk or other milk of choice will work as well)
1 teaspoon vanilla extract
How to Make Healthy Chocolate Truffles
Place all ingredients into a food processor
Pulse until everything is blended into a completely smooth dough, for approximately 4-5 minutes.
Place 1 tablespoon of cocoa powder on a plate and spread it out evenly.
Moisten your hands slightly and scoop a tablespoon of the dough and roll into a ball.
Place the ball onto the cocoa powdered plate.
After rolling all the dough into balls, sprinkle another tablespoon of cocoa powder over top.
Then roll each truffle in the cocoa powder on the plate until completely covered with a thin layer.
Store in an airtight container in the fridge for up to a week

When I divided the ingredients evenly (by weighing on my scale), each truffle is 73 calories | 15 grams Carbs | 1 gram protein | 1 gram fat. 🙂

Do you suggest any alterations to the Chocolate Truffle recipe if using Deglet dates?

You would probably need to use about twice as many Deglet dates as Medjool since they are usually significantly smaller in size. I did weigh the amount of dates I used in this recipe so try to get close to 220 grams. From what I have heard, Deglets are also not quite as sweet as and a little harder than Medjool as well. (to soften them you can soak overnight in water)
