These Healthy Quinoa Cakes are a great side dish or as a light lunch with a piece of fruit. Make the optional Yogurt Dill sauce to kick it up even more.
I am always on the outlook for healthy new side dishes to make. With our love of quinoa, I decided to make a yummy little cake out of a batch instead of my typical vegetables additions like this Spinach Mushroom favorite.
You can easily change the cheese and vegetables if you’d like. Use Parmesan cheese, add spinach, grated carrots or red peppers. You really can’t go wrong with adding to them.
You may also like these Tuna Patties as well as these Zucchini Cakes too. They all have the perfect amount of crunchiness.

My cakes would not hold together that well when forming into a ball. Could it have been because I was using cold quinoa (from the fridge previously made)? They sloppily held together so I could cook them and did taste delicious, using parm for the cheese! I want to make again but would like them to hold better. Thanks for sharing this recipe!

Your recipe looks great. I’m making tonight as an accompaniment to steaks. I realize that it says that it makes 12 servings. Can you tell me how many patties it makes when made according to the directions?
