This Roasted Portobella Mushroom Sandwich is exquisite. Loaded with flavors from the pesto, roasted red peppers, and feta.
A few Sunday’s ago, my family and I went to lunch at a favorite little cafe in our town called Janie’s Uncommon Cafe. I love this place! I ordered this amazing sandwich on the menu, Portobella Melt for myself and absolutely had to re-create it myself to have again at home. It has completely amazing flavor!
The version I had at the restaurant had provolone cheese melted on top of the toppings. I chose to use rumbled feta cheese instead and it was just as wonderful.
The Focaccia bread that was on the sandwich I ordered had a little cheddar cheese on the top and of course it was brushed with butter. I did find the cheese Focaccia at my grocery stores bakery but left the extra butter off. I think any Focaccia bread would be wonderful. An olive oil and rosemary version is calling my name next.
It’s times like this that I wish I had a panini maker. This sandwich is the perfect healthy panini!
INGREDIENTS
Portobella Mushrooms
1 -2 Tablespoons of coconut oil or olive oil
Pepper
Focaccia Bread
Basil pesto
Roasted red peppers
Red Onion slices
Feta cheese crumbles or provolone cheese
Lettuce
DIRECTIONS
Preheat oven to 425 degrees F
Wash the mushrooms and brush with melted coconut oil or olive oil.
Sprinkle with pepper
Bake for 20-25 minutes.
Spread 1-2 tablespoons of pesto sauce on the bottom slice of Focaccia bread.
Top with red onion slices, roasted red peppers, lettuce and feta cheese. If you use provolone cheese, it is fabulous to pop this in the microwave or in a toaster oven and melt the cheese.
