Chipotle Corn Salsa Copycat Recipe
Mexican food is by far one of my favorite things and whenever I need to make an appetizer for a party, I gravitate towards salsas like this. Plus I usually make these burrito bowls or tacos at least once a week and this corn salsa tastes like chipotle’s corn salsa recipe that I love so much.
What makes the flavor stand out in this so much? Roasting the corn kernels! It brings out the sweetness of the corn incredibly!
This salsa recipe is not only a great dip but can also be eaten as a side dish, salad or as a topping served on pan seared salmon, simple baked chicken or this Barbacoa Beef that tastes just like Chipotle too.
Ingredients
- Sweet Corn: The star of the show. While we use fresh sweet corn off the cob for the best flavor, you can use frozen or canned corn too. If you can’t find sweet corn on the cob, feel free to use yellow corn.
- Garlic: Fresh minced garlic is my favorite but you can use it from a jar too.
- Tomato: Any tomato will work. I like cherry or grape tomatoes.
- Red Onion: Finely diced works best. You can use sweet or white onion if preferred.
- Lime Juice: Use the juice of one whole lime or 2 tablespoons of bottled lime juice.
- Avocado: Wait until just before serving to add avocado so it doesn’t brown as quickly.
- Cilantro: Use more or less depending on preference.
- Salt and Pepper: To taste.
Variations/Substitutions:
- Bell Peppers: Add diced bell peppers for an extra crunch and a pop of color.
- Black Beans: Add black beans for added protein and fiber.
- Cheese: Sprinkle in some cotija or feta cheese.
- Mango: For a sweeter version, add diced mango.
- Cucumber: seeded diced cucumber gives a refreshing crunch
- Spicy kick: add diced jalapeño pepper or a dash of chili powder.
How to Make this Corn Salsa Dip Recipe
Step 1: In a small pan, sauté the raw corn and garlic on medium-high for about 5-10 minutes. Set aside and cool to room temperature.
Step 2: Combine all the remaining ingredients in a bowl and mix well.
Step 3: Add the cooled roasted corn and garlic and mix thoroughly again.
Step 4: Serve with tortilla chips.
Tips
- If using whole tomatoes, I like to remove the seeds to the salsa is less watery.
- Thaw frozen corn and drain any excess liquid before sautéing.
- You can grill the corn instead of sautéing if you’d like. It’s really good!
How to store
Keep the salsa refrigerated in an airtight container. It’s best enjoyed within 3-4 days.

Yes, you can prepare the salsa up to a day in advance. However, make sure to wait and add the avocado close to serving to prevent browning.

- Tortilla chips for dipping
Instructions
