This easy Coconut Rice is so amazing with it’s rich flavor! Turn plain jasmine rice into a wonderful, aromatic side dish that’s perfect for Asian inspired curry dishes, stir-fries, and more!
I haven’t been this excited about an easy peasy recipe in so long! This coconut rice has everyone in my family practically begging for it. It’s just as easy as plain ole rice but the flavor is so much tastier!
You can cook in on the stove or in a rice cooker. Either way it turns out fantastic!
What to Serve with Coconut Rice
The Coconut Rice complements so many dishes, especially Thai or Asian-inspired dishes like this Thai Chicken Zucchini Noodles with Spicy Peanut Sauce or Shrimp Zoodles in Thai Coconut Sauce.
You can also serve it as a extra flavorful side dish with this Spicy Asian Zucchini or steamed broccoli along side Asian Grilled Shrimp, Teriyaki Chicken Meatballs or Chicken Teriyaki
You could even add a teaspoon of sugar as well and then top with a few slices of fresh mango for a fabulous dessert.

Jasmine rice, rinsed and drained very well
Canned full-fat coconut milk
Cold water
Sugar
Salt
How to Make this Coconut Rice
Rinse the rice under cold water until the water is clear.
Add all the ingredients to a saucepan and bring to a boil.
Cover and reduce the heat to low.
Simmer for 15-20 minutes or until the liquid is absorbed and rice is tender.
Can I Use Brown Rice to Make Coconut Rice
You can substitute brown jasmine rice as well to make this coconut rice recipe. Brown rice does take about twice as long as white rice to cook. (cook per your package directions)

Instead of a can of coconut milk, try using Coco Lopez Cream of Coconut. Also, jasmine rice doesn’t need to be washed like white rice.
