    Made with fresh ingredients, Orange Garlic Shrimp with Asparagus is a wonderful healthy meal that can be ready in just 15 minutes.

    We just got back a 4 day trip to Savannah on Monday night for gymnastics meet.  It was so nice to escape the cold and spend those few days basking in some warm sun a little.

    Not to mention that Savannah is such a neat town! I have only been there a couple of times and it was a long, long time ago.  Who knew you could just walk around the streets with a cocktail in your hand! So…. we did.

    I also ordered lots of fresh seafood, which made me crave a little more when we got home.  Speaking of seafood, I had forgotten that parts of the movie Forest Gump were set in Savannah.  We set out to find the park bench that he sat on eating his box of chocolates.  The bench is no longer in Chippewa Square but it was a beautiful area.

    Now, we are comfortably back in the cold enjoying the blast of another good ole Nor’easter. Oh joy!   I decided I was going to make more seafood dishes this week and try to get more in my life than I have been.

    I also wanted something really simple!  You can’t get much easier than this Orange Garlic Shrimp with Asparagus. It literally takes less than 15 minutes.

    Since I also usually have rice already prepped in the refrigerator, this was perfect to put right on top.  You will love the fresh flavors!

    Orange Garlic Shrimp with Asparagus Ingredients

    Makes 3-4 servings

    1 lb large shrimp

    1 lb fresh asparagus, cut into 1 inch pieces

    1-2 Tablespoon coconut oil or olive oil

    3 garlic cloves minced

    1 teaspoon ginger powder or ginger paste

    Juice of 2 fresh oranges

    2 Tablespoon soy sauce or coconut aminos

    How to Make Orange Garlic Shrimp with Asparagus

    Preheat a large skillet and add the oil and garlic.

    Sauté for approx. one minute.

    Add the asparagus and cook until bright green, approx 3 minutes.

    Add the shrimp, ginger,  soy sauce or coconut amigos, and fresh orange juice.

    Stir continually until the shrimp are cooked thoroughly.

    Serve over rice

    ENJOY!!

    Ingredients
