For this easy recipe, all you have to do is mix the spinach, cream cheese, parmesan, garlic, and chives together. Slice the chicken down the side to butterfly it. Put ¼ of the mixture in each piece of chicken. Finish with wrapping each breast in bacon, which is the best part!
Also, you must know it is very easy to prepare but looks like you slaved over a fancy looking dish. I got several “ooh’s and ahh’s”. Think of making this the next time you are having dinner guests. 🙂
How Do You Make these Stuffed Chicken Breasts?
Preheat oven to 375 degrees F.
Place each chicken breast on a flat surface. With your hand placed flat on each piece, cut about ¾ quarter of the way through.(careful not to cut all the way through)
Blend spinach, cream cheese, parmesan cheese, chives and garlic in medium bowl.
Spoon ¼ of cheese mixture into the middle of the cut chicken breasts
Wrap each breast with 2 slices of bacon.
Arrange chicken breasts on baking sheet.
Then turn the temperature up to 400 degrees F (or on low broil) and cook for about 15 more minutes to get the bacon nice and crispy.
Cook for 30-40 minutes.
What to serve with Spinach Stuffed Chicken?
I served our stuffed chicken breasts along with simple roasted potatoes and green peas with sautéed onions.
I have also served it with mashed cauliflower or butternut squash with roasted veggies too.

Ingredients
- 4 chicken breast halves
- 10 ounce package frozen chopped spinach thawed and squeezed dry
- 4 ounces ⅓ less fat cream cheese room temperature
- ¼ cup parmesan cheese you could use ½ cup of feta cheese as well…. or a combo of both
- 2 Tablespoons chopped fresh chives sliced thin
- 4 cloves garlic
- 8 strips of bacon
- Salt and pepper to taste

I cant wait to try this! My question is how well do they “reheat”? Every year a group of us rent a house on the lake in wine country and I bring dinner. After a long day of wine tasting we go back to the house and whatever I have prepared that year I just pop into the oven to heat and we have dinner! Would this be something I could do a head and just heat?

This looks really delicious. I made a recipe similar to this for my family about a month ago using sundried tomatoes and spinach, and they tasted awesome, but didn’t hold together well. The bacon is a great way to keep them together and who doesn’t love bacon!? Looking forward to trying this recipe.
