These wonderful little Apple Cinnamon Quinoa Bites are a fantastic quick and healthy breakfast or snack.
Apple Cinnamon Quinoa Bites
So, I’m always on the outlook for a new healthy breakfast or snack to add to my arsenal. I am a self confessed snacker. I like to have something handy for mid-morning or mid-afternoon so that I don’t grab something completely unhealthy instead. Because believe me, I would in a heartbeat.
I eat a LOT of oatmeal. I actually eat oatmeal every single day for breakfast (preferably these easy overnight oats) along with my yummy egg white scramble.
I decided these little cinnamon apple quinoa bites would be just perfect . They are like a mini muffin pretty much. Sweetened naturally with maple syrup, they are great for breakfast on busy mornings or on the go with a piece of fruit or Greek Yogurt.
Ingredients for Apple Cinnamon Quinoa Bites, makes about 22- 24 bites
1 cup quinoa, cooked
1 cup oats, uncooked
1 cup chopped apples
1 teaspoon cinnamon
½ teaspoon nutmeg
¼ cup maple syrup
2 eggs, lightly beaten
How to Make Apple Cinnamon Quinoa Bites
Preheat oven to 350 degrees.
In a large mixing bowl, add your cooked quinoa, oats and apple.
In a separate smaller mixing bowl, combine cinnamon, nutmeg, maple syrup and eggs and mix until combined.
Then add spice mixture to quinoa mixture and toss until blended well.
Coat or spray your mini muffin pan with coconut oil or non-stick cooking spray. Put a little oil on the top of the pan as well for any over flow.
Fill each muffin hole with 1 tablespoon of the mixture.
Bake for about 15-20 minutes.
