Strawberry Banana Oatmeal Bars
I guess I have a thing lately for healthy snack choices. You could say we are a snacking family. As part of our clean eating diet, we eat every 2-4 hours. So having things to grab quickly that are homemade and not store bought is a must.
I have mentioned before how important it is to feed your body a healthy meal or snack on that 2-4 hour schedule throughout the day. It keeps your metabolism running optimally. When your body knows it can count on you to give it energy on a regular basis, it doesn’t have to (or need to) save up fat for fear that it doesn’t know when it will get more. Eating smaller portions of healthy choices keeps your body happy đ
These Strawberry Banana Oatmeal Bars turned out so amazing. I cooked frozen strawberries with just a couple of tablespoons of maple syrup for about 15 minutes. Then kind of chopped it with my wooden spoon to make it into my very own Strawberry Jam. So easy and fabulous! You can use any other frozen fruit you would like too. Frozen blueberries, peaches, blackberries, raspberries would all work.
Of course if you prefer to skip making your own jam, you can certainly just buy a jar of all natural store bought version too.
The bar itself it just a few ingredients. Oats pulsed into oat flour in the food processor, more oats, mashed ripe bananas, baking powder, maple syrup, vanilla and cinnamon.
Bake them at 375 F for 30 minutes and you are all set with another great snack option.
Ingredients for Strawberry Banana Oatmeal Bars
For the strawberry jam:
2 cups frozen strawberries
2 TBSP maple syrup
1 tsp vanilla extract
For the banana oat bars:
2 cups rolled oats, divided in 1 cup sections**
1 tsp baking powder
2 large ripe bananas, mashed
1/4 cup maple syrup
1 tsp vanilla extract
1/2 tsp cinnamon
How to Make Strawberry Banana Oatmeal Bars
For the jam:
Add strawberries and maple syrup to a saucepan on medium heat.
Heat until the berries begin to liquid, about 10 minutes.
Bring to a boil and cook for an additional 5 -10 minutes stirring occasionally until berries begin to thicken and become more
Use a spoon to mash them a little.
Stir in the vanilla and cook for another 5 minutes.
Remove from heat and allow the jam to cool for about 20-30 minutes to thicken it even more.
For the bars:
Preheat oven to 375 degrees F.
Line an 8 x 8 baking dish with parchment paper
Place 1 cup of oats in a food processor (or blender) and pulse for 1 minute or until they look like flour.
Transfer the oat flour to a large mixing bowl, and add the remaining 1 cup of oatmeal and baking powder and mix well
Add the mashed bananas, maple syrup, cinnamon and vanilla extract.
Mix thoroughly to combine.
Transfer 1/2 of the mixture into the prepared baking pan. Press the mixture into the corners and flatten with the back of a spoon.
Spoon the jam over the oat mixture and spread evenly with a spoon or spatula. Spread to within about 1/4 inch of the oatmeal mixture so the edge of the the jam doesn’t burn.
Spoon the remaining oatmeal mixture on top of the jam in big spoonfuls. Then spread the spoonfuls out lightly.
Bake for 30 minutes or until the top turns a light golden brown.
Remove from oven and allow to cool completely in pan before cutting into bars.
Optional – use 3/4 cup all-natural store bought jam if you want to skip making your own.
