These delicious Strawberry Banana Oatmeal Bars are a perfect breakfast with yogurt or even as a healthy snack. They are quickly made with all-natural ingredients of oats, bananas, maple syrup, vanilla and strawberry jam.
I guess I have a thing lately for healthy snacks. You could say we are a snacking family. So having things to grab quickly that are homemade and not store bought is what I try to do. We love making homemade granola bars or these superfood Energy Bars, so making these new oatmeal bars was a great, new choice!
These Strawberry Banana Oatmeal Bars turned out so amazing. I cooked frozen strawberries with just a couple of tablespoons of maple syrup for about 15 minutes. Then chopped it with my wooden spoon to make it into my very own Strawberry Jam. It is easy and fabulous!
Of course if you prefer to skip making your own jam, you can certainly just buy a jar of all natural store bought version too.
You can use any other frozen fruit you would like too. Frozen blueberries, peaches, blackberries, raspberries would all work.
The bar itself it just a few ingredients. Oats pulsed into oat flour in the food processor, more oats, mashed ripe bananas, baking powder, maple syrup, vanilla and cinnamon.
Theses bars are not overly sweet. If you prefer a sweeter flavor, feel free to add about ¼ cup of sugar.
Ingredients for Strawberry Banana Oatmeal Bars
For the strawberry jam:
2 cups frozen strawberries
2 tablespoon maple syrup
1 teaspoon vanilla extract
For the banana oat bars:
2 cups rolled oats, divided in 1 cup sections**
1 teaspoon baking powder
2 large ripe bananas, mashed
¼ cup maple syrup
1 teaspoon vanilla extract
½ teaspoon cinnamon
How to Make these Strawberry Banana Oatmeal Bars
For the jam:
Add strawberries and maple syrup to a saucepan on medium heat.
Heat until the berries begin to liquid, about 10 minutes.
Bring to a boil and cook for an additional 5 -10 minutes stirring occasionally until berries begin to thicken and become more
Use a spoon to mash them a little.
Stir in the vanilla and cook for another 5 minutes.
Remove from heat and allow the jam to cool for about 20-30 minutes to thicken it even more.
For the bars:
Preheat oven to 375 degrees F.
Line an 8 x 8 baking dish with parchment paper
Place 1 cup of oats in a food processor (or blender) and pulse for 1 minute or until they look like flour.
Transfer the oat flour to a large mixing bowl, and add the remaining 1 cup of oatmeal and baking powder and mix well
Add the mashed bananas, maple syrup, cinnamon and vanilla extract.
Mix thoroughly to combine.
Transfer ½ of the mixture into the prepared baking pan. Press the mixture into the corners and flatten with the back of a spoon.
Spoon the jam over the oat mixture and spread evenly with a spoon or spatula. Spread to within about ¼ inch of the oatmeal mixture so the edge of the the jam doesn’t burn.
Spoon the remaining oatmeal mixture on top of the jam in big spoonfuls. Then spread the spoonfuls out lightly.
Bake for 30 minutes or until the top turns a light golden brown.
Remove from oven and allow to cool completely in pan before cutting into bars.
Optional – use ¾ cup all-natural store bought jam if you want to skip making your own.

These look yummy but I am allergic to Maple Syrup. What would you think I could replace the maple syrup with?
Sherri
You can substitute the maple syrup with an equal amount honey or even brown sugar if you prefer.:) Enjoy!!
