These Parmesan Pesto Roasted Tomatoes are a wonderful, light side dish bursting with flavor. Just 3 ingredients make them so easy to make for the perfect addition to a meal.
If you have been visited here often, you may know by now that I love simple. But simple doesn’t mean boring. This is one of those recipes that you can whip up so fast with just 3 ingredients.
Just slice up tomatoes and top with a little dollop of pesto and sprinkle with a little parmesan cheese. Bake for just a few minutes and wow your mouth!
Since I am prepping for my next competition I measured everything out. I put 5 grams of pesto sauce and 3 grams of parmesan on each 20 grams slice.
The macros for each slice comes to 36 calories | 3.2 grams Fat | 1 gram of Carbs | 1.5 grams of protein
Tomatoes (of choice) sliced about 1/4 inch thick
Shredded parmesan cheese
Preheat oven to 400 degrees F.
Place sliced tomatoes on a baking sheet.
Top each slice with a teaspoon of pesto sauce.
Sprinkle with a tablespoon of parmesan cheese.
Bake for 10 minutes.
