    Easy Beet Hummus

    This Beet Hummus is a fabulous, packed with flavor, appetizer that is so simple to make with roasted beets, lemon and garlic and is the perfect dip for veggies or a spread for pita bread.

    Red Beet Hummus

    Hummus is one of my favorite healthy snacks to have along with fresh vegetables or with crackers.  This Avocado Hummus or this Roasted Red Pepper Hummus are two of my all-time favorites that I make often.

    I also love roasted beets too! So marrying these two together into a fun (and pretty) appetizer was a wonderful idea I just had to try!

    Even if you think you may not like this beets in hummus version, I highly recommend you give it a try.  You will be so amazed at how the lemon and garlic cover any potential strong beet flavors.

    Ingredients For This Hummus Recipe

    Beets – I you don’t want to roast beets yourself, you can buy them already roasted in the produce section of most grocery stores.

    Chickpeas – I either use a full can of drained chickpeas or cooked dry chickpeas that I have in the freezer.

    Sesame oil – Just a little adds a nuttier flavor. You can swap this for olive oil if you’d like.

    Lemon Juice – fresh squeezed is the best in my opinion but use bottled too if that ‘s what you have on hand.

    Olive oil – I like to use a good quality extra virgin olive oil.

    Garlic – Fresh minced garlic has the best flavor but you can use jarred minced garlic too. If all you have is garlic powder, use 2 teaspoons.

    Salt and pepper to taste

    Optional garnishes: roasted chickpeas, fresh cilantro or sliced scallions

    How to Make this Beet Hummus

    Below is a list of the ingredients you’ll need to gather to make this easy recipe.  Scroll down to the full recipe card for individual amounts.

    Roasted Beets, chickpeas and garlic in a food processor

    Step 1: Place beets, chick peas, lemon juice, garlic, sesame oil, salt, and pepper to food processor or blender.

    Step 2: After blending, place it in a bowl and slowly stir in the ¼ cup of olive oil until completely combined.

    Garnish with roasted chickpeas, cilantro or scallions and serve with your favorite sliced vegetables or pita bread.

    Ingredients

    • 2 cooked beets
    • 15 ounces chickpeas
    • 1 tablespoon sesame oil
    • 1 lemon juiced
    • ¼ cup olive oil
    • 2 tablespoon garlic minced
    • ½ teaspoon salt
    • ½ teaspoon pepper
    • Fresh cilantro or scallions optional garishes

    Instructions

    • Place beets, chick peas, lemon juice, garlic, sesame oil, salt, and pepper to food processor or blender.
      2 cooked beets, 15 ounces chickpeas, 1 tablespoon sesame oil, 1 lemon, 2 tablespoon garlic, ½ teaspoon salt, ½ teaspoon pepper
    • After blended, place in a bowl.
    • Slowly stir in the ¼ cup of olive oil.
      ¼ cup olive oil
    • Garnish with cilantro or scallions.
    • Serve with your favorite sliced vegetables or pita bread.

    Notes

    Store in an airtight container in the refrigerator for up to 5 days.
