    Cucumber Feta Bites

    These Cucumber Feta Bites are a wonderful, fresh appetizer to make and serve at any get together.  They are so easy to make and healthy to eat.

    Cucumber Feta Bites

    With Spring finally emerging in our area, out comes my desire for light, crispy foods and snacks.  One of the first I start craving is this Chicken, Avocado, Cucumber, Tomato Salad or this Chickpea Corn Salad.

    Cucumbers are such a great, healthy veggie to add the perfect amount of crispiness. They are also great to use as a substitution for crackers.  I made these little nuggets for a fun snack yesterday afternoon.

    These bites are so easy to whip up if you need a new idea for a great appetizer. They would be perfect for a brunch or shower too.

    Being a waste not kind of gal, I decided to use the scooped out pulp from the cucumber in the feta mixture.  It made the mixture just a tad more liquidy so feel free to omit this if you want.  Either way they are fabulous!

    Cucumber Feta Bites Ingredients

    1 english cucumber

    1 tablespoon of feta cheese

    3 tablespoons of plain fat free Greek Yogurt

    2 teaspoons of cream cheese

    Sliced almond, optional

    How to Make Cucumber Feta Bites

    In a small bowl, mix the feta cheese, Greek yogurt and cream cheese together well.

    Slice the cucumber in half the long way.

    Scoop the pulp out of center of each side of the cucumber.

    Split the feta mixture to each cucumber half and spread it on the cucumber halves.

    Top with sliced almonds.

    Slice the cucumber into about 1 inch pieces.

    Optional: Add the cucumber pulp to the feta mixture. I did this. It is a little more liquidy but so yummy.

    ENJOY!!

    Ingredients

    • 1 english cucumber
