    Cucumber Avocado Shrimp Appetizer

    This Shrimp Appetizer features blackened shrimp atop creamy avocado and a cucumber slice. It’s an easy, cold appetizer recipe to serve at any party or Holiday gathering.

    This is one of the easiest appetizer recipes ever and always gets raves whenever I make it for parties. The shrimp is loaded with flavor, the cucumber is the perfect crunch and the guacamole is the perfect touch.

    Even more of a bonus is that that are a super low calorie appetizer.  With less than 70 calories each, they are also gluten-free, paleo and low-carb as well.

    I simply cooked the shrimp in a little coconut oil and Old Bay seasoning. You can easily make them more spicy if you prefer by adding a little cayenne pepper. The key to cooking the shrimp is to separate them in the pan and not allow them to touch each other.

    Ingredients needed:

    1 tablespoon coconut oil

    1 tablespoon Old Bay seasoning

    1 pound shrimp, peeled and deviened

    1 cucumber, sliced

    Homemade guacamole (or store bought)

    A tray of food on a plate, with Shrimp on top of cucumber slices and avocado

    How to Make these Shrimp Bites

    Toss the shrimp in the oil and Old Bay Seasoning (adding more cayenne for extra heat if preferred)

    Cook in a preheated pan on medium high heat for about 2-3 minutes per side.

    Place a dollop of guacamole on each cucumber slice

    Then top with cooked shrimp

    ENJOY!!

      Could you use cocktail shrimp already cooked and just season with the Old Bay?

        Would it work as well with a different oil and plain avocado instead of guacamole?

          Oh absolutely! You could simply mash plain avocado and maybe season it a little with garlic powder if you’d like 🙂 You can also any oil you prefer.
