These yummy Energy Bars are packed full of superfood nutrients and sweetened with honey and just a little touch of chocolate.

I often make healthy snacks like homemade granola bars or energy bites to have on hand for when I am on the go. They go great with Greek yogurt or piece of fruit.

stack of 3 oat and quinoa energy bars with chocolate chips around

This week we are traveling and I decided to make these energy bars for our trip.  They are so wonderful, packed full of nutrients and just sweet enough to satisfy any craving.

    Ingredients for Energy Bars

    Uncooked quinoa

Unsalted sunflower seeds – Raw or roasted

Unsalted pumpkin seeds – Raw or roasted and

    Almonds – Sliced

    Dates – Chopped

    Raisins

Chocolate chips – You can use any kind of chocolate chips you’d like.

    Honey

    Coconut oil

    How to Make Energy Bars

Step 1: Preheat oven to 350 degrees F

Step 2: Line a small glass baking dish with parchment paper.

Step 3: Combine all the dry ingredients in a medium-sized mixing bowl.

Step 4: Melt the coconut oil in a microwave-safe dish for about 1 minute and then stir in the honey.

Step 5: Add the wet ingredients to the dry ingredients and mix until thoroughly coated.

Step 6: Press the mixture into the prepared 8 x 8 glass baking dish.

    Step 7: Bake for 20 – 25 minutes.

Step 8: Remove from the oven and let cool.

Step 9: Once completely cooled to room temperature place the dish in the refrigerator for 30 minutes.  This makes cutting them into bars much easier.

    How To Store

Store in an airtight container in the refrigerator.

Looks good! Do they have more of a crunchy or chewy texture? (obviously somewhat crunchy with the nuts and all)

I am co-hosting the #HomeMattersParty this month and would love to have you stop by for a visit. The current party ends Monday night. http://alaynascreations.co/2015/07/31/home-matters-link-party-48/

They are actually a wonderful combination of both! The dates add the chewy and everything else…the crunch! Love them!

Maybe I’m a little biased since we live in NC, but NC beaches are the best! Glad you had a great time. These look wonderful, pinning and stopping by from #SITSBLogging. Hope you linkup with our Small Victories Sunday Linkup too!
